While in Mexico I had to go visit the site of the St. Regis Resort, Punta Mita scheduled to open in July of 2008. Punta Mita is one of my favorite spots in the world (mainly because of the long peeling surfable waves that roll in off the point right near the resort.) Punta Mita is just north of Puerto Vallarta, easy enough to get to, but far enough away to provide a different experience of coastal Mexico. Being on the cusp of the Banderas Bay with views out into the Pacific, there are abundant opportunities for not only surfing but other ocean activities such as fishing, whale watching or scuba diving at the nearby Las Marietas Islands. When the resort opens, it will feature a Remede Spa giving one more good reason (as if it were needed) to stay in Punta Mita.
