Dining and Cooking

• The chef prepares two meals per day; lunch and dinner. For breakfast, the chef prepares fresh squeezed juice, and fresh cut fruit and leaves in the fridge the night before. A suggested menu is provided separately; however, the cook can offer many other choices as he specializes in fresh seafood from the local fishing village, a variety of fusion dishes and various Mexican favorites.
• Dinner time is 7:30 p.m. to 9.00 p.m. Any time change should be made through the houseman or cook directly, if not already arranged through the rental concierge. Normal staffing for dinner in the dining room consists of the cook and the houseman who work as a team to provide an enjoyable dining experience.
• Lunch is more informal under the pergola at 1:30 pm, and is normally handled solely by the cook.
• Breakfasts are normally self serve with fruits being prepared by the cook in advance the day before and left in the fridge.
• If cooking and/or serving is required for all meals, arrangements should be made through the concierge for overtime approval and/or extra staffing.
